Baked Prosciutto & Egg Cups
My friend and former CFA coach, Rebecca, wrote about these on her blog and I had to make them.
This is so easy to prepare and makes for an awesome breakfast or mid day snack. If you make ahead, you can reheat in the microwave on 50% power for 20 seconds.
I have experimented with sliced turkey breast and that works just as well as the prosciutto. You can add anything you want to these so get creative. The last batch I added red peppers and it turned out really well.
Colconut oil
12 thin slices prosciutto (or sliced turkey breast)
Basil leaves – sliced in to thin ribbon
12 eggs
Preheat oven to 375. Coat each muffin cup with coconut oil and fit each with a slice of meat. Sprinkle the cups with a ribbon or two of basil and add any other fillings (veggies). Crack an egg into each cup and add another ribbon or two of basil. Bake for 15 minutes and then let rest for five minutes before removing from the pan.
